Ticket Time

Ticket time is the interval between the moment an order is placed and the moment it is handed to the guest. In specialty coffee the drive-thru benchmark sits around 40 seconds, and queue research shows customers abandoning lines after five to seven minutes.
Every additional preparation step on the bar stretches the number: measuring cream, scaling two sugars, boiling tea. A scratch karak runs 15-20 minutes; a scratch raf stacks up to roughly 115 seconds of manual steps. Both collapse under a morning rush.
Soluble bases compress the sequence to dose, steam, serve: 20-30 seconds per cup regardless of who is behind the machine.
